I should rename this blog "Finding My Ass Again!" because I have been lapsing for some time now when it comes to exercise and eating well and the evidence of my lackadaisical behavior is creeping up on me. So once again, the push is on to get myself motivated to get moving and eat a healthier diet...day three in and feeling better already.

I had a bunch of homemade pesto floating around in the freezer for ages that I wanted to use up so I threw this together in a hurry for supper tonight and I was amazed at how wonderful it taste...and it so quick and easy to make. The pesto I have remaining in the freezer won't be there for long because I will be making these again soon.

Pesto Beef Wraps
  

2 Flat breads ( I used Flax flat bread)
1/2 c. pesto
Cooked ground beef ( I used some left over Taco seasoned beef)
Grated cheddar cheese
Hot pepper flakes (or whatever seasoning you like)

Just spread some pesto over the wraps, sprinkle on ground beef, cheese and pepper flakes and roll. Heat in microwave one to two minutes.

Eat and enjoy!
